I guess the stage show is very different from the movie.

Aladdin without Abu and Iago is like... Lucy without Ethel, The Honeymooners without Ed and Trixie, Will and Grace without Jack and Karen, The Lion King without Timon and Pumba, Bambi without Thumper and Flower...

Iago is indeed in the show, just not as a parrot. He is played by Don Darryl Rivera and is quite hilarious.
