If I were in charge, I might have sought out and hired someone who'd understudied the part the first time around, if only for the preview period until a new understudy could be rehearsed.

An actor called Vance Avery was an understudy Emcee for a long time and I had the pleasure of seeing him go on one of the many times I saw this production in its previous incarnation. He was terrific and every bit the equal of the many marquee stars I saw in the part.

Of the actors who played the part during the original run, not all of them were stars nor did all of them go on to stardom. What are Matt McGrath and Robert Sella up to these days? Either of them might conceivably have been hired for a limited time as well, if they were available.
