"I hope you're not suggesting it should be sung as : 'Although he may not be the man some (big breath) girls think of as handsome...' - I hear that a lot, and it irks the hell out of me. ;-) "

A much better choice would be to sing the whole phrase on one breath and keep the original note values, which would make the rhyme clear. On the other hand, it's not a 100 percent perfect rhyme, so maybe that bothers some people.
