I thought I noticed this huge continuity mistake the first time I saw the movie, but I thought maybe I missed something, so I made a point of watching that moment very closely the second time I saw it. The baker's wife cuts off Rapunzel's hair by means of a hook just below Rapunzel's window, leaving her with hair not much longer than shoulder length. (At first I thought maybe Rapunzel originally had two very long braids of hair, and only one of them had gotten cut off, but that's sure not how it looked to me on second viewing.)

Why they didn't just give the baker's wife a pair of scissors -- she was out looking for golden hair anyway -- is a question for Lapine. As it is, I guess they just hoped people wouldn't notice that almost all of the hair is cut off in one scene, and then all of it is back the next day. And, apparently, some people didn't notice :-)
