It's essentially what happens with much of ballet; a new choreographer will use the original Petipas steps for instance but add their own personal take on them. In terms of musicals I think the whole question depends on whether the production itself is a radical departure from the original; with a radical departure you'd expect a very different take on the orginal choreography.
