Well first of all you are willfully unable to go with the concept that this and many other love stories hinge on - namely, love at first sight, as you stated. It is literally that. You either go with it or not.
But moreso, in this story, you are leaving out the very important element of the GODS and their power and using of these humans for their little experiment. Before she ever meets him, the gods decide to use her and Daniel to test the power of love against death, if she chooses love.
And then practically speaking for her, you seem to not include that she is a very young naive girl on a small island who is not only going to be in love with being in love but also the urgency and stakes and power and beauty and adventure of loving this particular new boy.

I agree it is always far fetched in any love at first sight story, but I do think there are important contributing elements you're not giving credence to in this show.
