I see what you're saying, but I do think that PC has become a bit of a catchall that is applied to any instance in which someone feels they can't express themselves. I would agree that this example might be a great fit for the negative connotation of the word, as in a synonym for censorship.

My concern, though, is that when we use PC to mean censorship, we are empowering the people who use it as a pejorative because it prevents them from saying blatantly racist, misogynistic, or otherwise harmful words. Rather than having to say, "I want to be a racist jerk", they get to say "The PC Police are censoring me".

That's my concern.
