I'm not in casting, but it seems logical to me that training to dance at levels we routinely see in Broadway shows is incredibly physical exercise, so it's not surprising to me that professional dancers tend to be lean and tight and muscular, but not too muscular. If we all had the natural talent and the time to put in the physical work over a couple of decades, we'd all look like Broadway dancers.

But we do see diversity in ensembles when casting people purposely seek that. Look at a show like KINKY BOOTS, which features an ensemble of different body types all of whom move to varying degrees.

One of the worst examples of casting an ensemble I've ever seen was the most recent revival of HOW TO SUCCEED IN BUSINESS WITHOUT REALLY TRYING. That production was directed by a choreographer, who filled his ensemble completely with dancers with traditional dancer bodies. But, this is a show that cries out to be populated with character of different ages and body types. So the production featured an ensemble of dancers trying to play characters, rather than characters moving and dancing.
