You didn't read the letter, did you? The writers make it crystal clear that their concern isn't simply about the presence in the cast of actors who are not Jewish, and their position is rather more nuanced than you suggest.

And in a cultural/political moment in which this country's main opposition has been embroiled - for at least a couple of years - in a thoroughly unpleasant ongoing row about anti-Semitism, and in which overt racism and anti-immigrant rabble-rousing have firmly entered the political mainstream, it's quite understandable to see Jewish artists raise concerns about representation.
