I adore the show far far more than you do, and I think the score is easily in my Desert Island CDs, and in my top 4 sondheim shows i think (with sweeney/sunday/follies being the other 3, which all tie for 1st place) ... but I have to agree that it's just bonkers and a missed opportunity those MANY MAIN CHARACTERS do not sing in act 2 at all. So much time is spent beautifully setting them up in act one, and while they get their due in the text, they do not in the score - and it's a musical. Not even a group song for them. Not a solo for Anne about her realization of her true feelings about Fredrick vs Henrik. I love "It Would Have Been Wonderful" but it could do with one less verse. It is so clever, and it does build on itself but only slightly. At the very least it could have been also a number share with a split scene of Anne and Charlotte in another area of the property, lamenting their own situation or perspective on the weekend and the plans they set up by being there. Nothing! How Anne and Henrik have nothing, and how Armfeldt has a monologue but not a reprise of Liaisons, is beyond me ... yes, to everything you said.

But it somehow manages to work every time nonetheless, so I have to give it that. Though I do think the bway revival was woefully mis-directed.

I don't agree, however, on the lyric issues you have in "You Must Meet My Wife." I've never found that song to be self-consciously funny or false. I'm not entirely sure what you mean but it doesn't ring true to how i've responded to it on the albums or in the show.
