Chaim Topol also toured with Fiddler on the Roof for years as well as stints on Broadway and the West End (not to mention his runs in the original Tel Aviv and London companies BEFORE he made the film).
I expect Theodore Bikel probably played the most performances (a record once held by Paul Lipson).
