Glenn does not look 75, despite her actual age (which is currently 74).
I really don't think she's be playing it as her own actual age.
I think you could easily change that line to "65" or even "60" and it would fly.
The only reason to think you can't change this line is because it doesn't match up with the assumption of what age Norma would have been when she was a silent film star. I don't think the majority of audiences will know this, think this, or care about the idea that she would have been a star in her 20s and not 30s, for example. Stretching credulity is not an issue, I assume, with a movie of ALW's Sunset Boulevard. The movie being made at all brings us past that point. But assuming they are remaking Norma to have been a star in her late 30s, and also assuming they think she will be playing Norma as in her 60s (rather than the actor's actual age)... it works just fine.

We also don't know what they are intending to do or able to afford in editing to "de-age" her a bit, in every shot. I'm not assuming that, but it's possible they have this in mind already.

Let's also not forget that we live in a world where Hollywood cast Glenn as Nellie Forbush, a character definitely written to be in her 20s... when Glenn was in her MID FIFTIES... and she had zero attachment to that role in the public consciousness and also was not at the height of her fame/film career then either (less so then than now I think we all the Oscar buzz and narrative around her year after year).
It's much different to make a character associated with age, delusion and past-prime into a character even older and further past her prime ... than it is to take a character conceived and written to be young and naive and make her a matronly woman of a certain age. Glenn was past the age most nurses would even have been working anymore during that war, let alone away working on a remote island. So I think this is less of an issue than it was for South Pacific, which had no reason to be made with Glenn at all!
