Well, she probably shouldn't have said anything (except that she's trying to explain Broadway to laypeople) and definitely shouldn't have said it that way. She makes it sound like a lack of ability or talent, and it's not.

But the underlying concept isn't wrong. Shows like Phantom and Mormon that haven't seen cancellations have many cast members who've been in the show for a long time. They have broad, experienced coverage by understudies and swings who've been jumping in and out of each other's shoes for years. So they're much more prepared for whatever subset of the cast can't perform on a given night. (Though Hamilton has the same, and they're off all week.)
