Eddie was not chosen with "color blind" casting... it seems extremely intentional to me, the idea being that he is a black hoofer, of which there were many notably then.
I think the OP was implying that the maid is now white only because we are not supposed to see black people in roles like the maid or servant or whatever if they aren't given lines to have them empowered or layered or have perspective expressed in the show etc, rather than just a tiny stock role.
But yes I agree it's weird and silly that this was even mentioned as an objection or question. I just saw this production 2 weeks ago and I don't remember if the maid even has lines... let alone what her race was. Did the original script specify the maid was black?
