I think you answered your own question. Young Colehouse does nothing that someone else couldn't be coached to do at a moment's notice. And the Little Girl only appears with Tateh who can guide her into position. The Little Boy has more lines and behaves autonmously. It makes sense you'd want to have someone else rehearsed, just in case, since you never know when working with children.
