I don't really buy the idea that it's a ploy Nancy uses with any new recruit. Whether we buy it or not, I think it's supposed to be that Oliver is innately aristocratic, and both Fagin and Nancy see this, hence Fagin introducing Oliver to Nancy with an esquire appended to his name.

Of course, it's not definitively one or the other.
